🥞 Homemade Pancake Mix

Dry Mix (Store for later use)

  • 4 cups all-purpose flour

  • 3 tbsp baking powder

  • 1 tsp salt

To Make Pancakes (per 1 cup of mix)

  • 1 cup pancake mix

  • ¾ cup milk (or almond milk)

  • 1 egg

  • 1 tbsp melted butter or oil

  • 5-10 drops liquid monk fruit sweetener (adjust to taste)

  • 1 tsp vanilla extract (optional)

Instructions

  1. Prepare the batter: In a bowl, mix all the wet ingredients, including the liquid monk fruit.

  2. Combine: Add the dry pancake mix and stir until just combined.

  3. Cook: Heat a pan over medium heat, lightly grease it, and cook the pancakes as usual.

  4. Serve: Enjoy with your favorite toppings!


I plan to use maple syrup as sweetener for my toddler once he gets his molars. So ill swap the monk fruit for 1 to 2 tbsp maple syrup (adjust to taste)!
