Honey Vanilla Sweet Bread (Two 5x3 Loaves)

Prep Time: 10 minutes Cook Time: 25-30 minutes Yield: 2 mini loaves
Ingredients:
1 ½ cups flour
1 tsp baking soda
½ tsp salt
½ tsp cinnamon (optional)
½ cup butter, melted (or coconut oil)
⅓ cup honey (or maple syrup)
2 eggs
½ cup milk (or almond milk)
1 tsp vanilla extract
Optional Add-Ins:
¼ cup chopped nuts (pecans, walnuts, etc.)
¼ cup raisins or dried fruit
½ tsp nutmeg or cardamom for extra spice
Instructions:
Preheat Oven to 350°F (175°C). Grease two 5x3-inch mini loaf pans or line them with parchment paper.
Mix Dry Ingredients: In a medium bowl, whisk together flour, baking soda, salt, and cinnamon.
Mix Wet Ingredients: In a separate bowl, combine melted butter, honey, eggs, milk, and vanilla extract. Whisk until smooth.
Combine: Gradually add the dry ingredients to the wet ingredients, stirring gently until just combined. Fold in any optional add-ins like nuts or dried fruit.
Bake: Divide the batter evenly between the two mini loaf pans. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
Cool: Let the loaves cool in the pan for 5-10 minutes, then transfer to a wire rack to cool completely.
Serve & Store: Enjoy warm or store in an airtight container for up to 3 days at room temperature. They also freeze well!
