Lactation Cookies with or without Chocolate Chips

Protein-Friendly Lactation Cookie Recipe:
Ingredients
Dry Ingredients:
1 cup rolled oats
1 cup almond flour
1/4 cup brewer's yeast (supports lactation)
1/4 cup ground flaxseed (supports lactation)
2 scoops (20g each) Sports Research collagen protein powder
1/2 tsp baking soda
1/2 tsp salt
Wet Ingredients:
1/3 cup melted coconut oil or unsalted butter
1/4 cup almond butter (or peanut butter)
20-25 drops liquid monk fruit sweetener (adjust to taste)
1 large egg
1 tsp vanilla extract
Mix-Ins:
1/2 cup sugar-free dark chocolate chips (or regular if preferred)
Instructions
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a large bowl, combine all the dry ingredients: oats, almond flour, brewer's yeast, ground flaxseed, collagen protein powder, baking soda, and salt.
In another bowl, whisk together the wet ingredients: melted coconut oil, almond butter, liquid monk fruit sweetener, egg, and vanilla extract.
Gradually add the wet ingredients to the dry ingredients, mixing until fully combined. Fold in the chocolate chips.
Scoop the dough onto the prepared baking sheet using a cookie scoop or spoon, flattening slightly as desired.
Bake for 10-12 minutes or until the edges are golden brown. Let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
