Poached Egg, Chicken and Rice

Hi! Your gonna love this easy recipe.
Poached Egg with Chicken over Rice.
1/4 cup dry rice (double portion for 1/2 cup cooked rice)
1/2 cup Water
2 poached eggs
1 TBSP of Garlic Salt
4 oz of Chicken
1 Tsp of Garlic Powder
1 Tsp of Onion Powder
Pinch of Salt
1 TBSP Abodo (for the chicken)
2 TBSP Lime Juice
Rice
Start 1/4 cup dry rice rice on the stove top. I will usually make a double portion since this will yeild 1 cup cooked rice.
It's usually a 1 to 2 ratio for water. Add lime juice prior to cooking for a seasoned rice effect!
Add both to a pot covered on high until boil, then switch to low-med for 15-18 minutes, switch the burner off and take off let sit for 5 minutes.
Chicken
I prep chicken in the instant pot ahead of time. In order to do this add whatever you want for chicken to the instant pot cover with either chicken broth or water with chicken broth base seasoning. Set on high pressure for 15 minutes with a 10 minute natural release. Then shred the chicken and drain. After add the adobo seasoning, garlic powder and onion powder to a 4 oz portion (adjust as needed) to a frying pan and fry it over the stove top on medium.
Poached Egg
Start another pot with about 4 cups of water, wait for the boil and add the 2 eggs let cook for 2-4 minutes depending on desired firmness.
Plate it!
Add rice to a bowl, then chicken, add poached eggs last on top and then top with garlic salt.
Add desired sauces or dressing as desired 😍 😋
